New author, Hope Fox, brings more than 100 recipes from the country's best restaurants into the home kitchen in her debut book, Impress for Less!  Finally... Terrific Recipes from the Finest Restaurants You Can Really Make at Home (John Wiley & Sons, $18.95; August 2007).  These recipes are streamlined and simplified for the basic home cook, but terrific enough to satisfy the fussiest gourmet.  

In Impress for Less!, Hope takes signature dishes from the menus of such revered eateries as:
Jean Georges in New York, Lucques in Los Angeles, Mary Elaine's at the Phoenician in Phoenix and Commander's Palace in New Orleans, and creates simple, yet impressive home cook versions.  She worked with culinary superstars, like Rick Bayless, Suzanne Goin and Joel Antunes, to transform their dishes and give home chefs the inside scoop on how to make them with basic kitchen skills.

Impress for Less! includes main dishes along with starters, soups and sides for a full dining experience.  Among the impressive re-creations are:

  • Caramelized Bay Scallops with Clementines and Cauliflower
  • Tamarind-glazed Flank Steak with Mango-Jicama Salsa
  • Roast Chicken with Poached Plums and Swiss Chard
  • Cream of Porcini Mushroom Soup

Impress for Less! is more than just a cookbook.  It gives home chefs options to prepare meals in whatever way they choose.  On every page, there are special short cuts, tips and tricks, and other helpful hints, including:

  • Chef's Notes:  With each recipe, Hope gives simple explanations of not-so-common ingredients, such as calvados, chanterelles or sumac, and she shares the chef's tricks, like how to crack open a stone crab and segment citrus fruit.
  • Where to Buy:  For harder-to-find ingredients, like manchego cheese or Muscovy duck, Hope provides names of companies, websites, phone numbers to get them simply and effortlessly.
  • Restaurant Briefs:  Just like a travel guide, Hope showcases each of the featured chefs and their acclaimed restaurants.
  • Recommendations for Beverage Pairings:  To complete the meal, Hope offers two beverage suggestions for each dish, one for every day and another for special occasions.

There also is a food dictionary to look up ingredients and terminology that are difficult to understand.  Impress for Less! is a comprehensive culinary resource guide that home chefs can reach for even when making other recipes.
